Melting Pineapple Potatoes

INGREDIENTS
4 medium russet potatoes
1 tablespoon Island Sunrise
4 tablespoons melted butter
1 teaspoon rosemary
1 cup chicken broth
1/4 cup pineapple juice
3/4 cup pineapple chunks
2 gloves garlic

INSTRUCTIONS
-Preheat oven to 450 degrees
-Peel potatoes
-Slice potatoes into about 1” rounds and set aside in a large bowl
-In a small bowl, whisk together butter, Island Sunrise and rosemary
-Place potatoes in single layer on baking sheet (best to use smaller baking sheet, I only had a large one available)
-Roast in oven for 20 minutes. Flip potatoes and then roast for another 15 minutes.
-While the potatoes are roasting, mix together chicken broth, pineapple juice and garlic.
-Remove potatoes from oven, flip one more time and pour broth mixture over potatoes. Place back in oven and roast for another 15 minutes
-Remove and drizzle with juices. Top with more rosemary if desired
